No, that’s not another petname for my husband! My dad’s really visiting, and since I rarely get to cook for him, I’m pulling out all the stops and cooking up a storm! And if my mom and brother are reading this, yes, there is vinegar in EVERYTHING on the menu- so be happy you didn’t come too!! (my mom and brother detest vinegar anywhere NEAR their food)
I’ve been brining locally grown and butchered double-cut pork chops for 3 days in a brown sugar-thyme brine, and made up huge batches of beet-cucumber salad and hot potato salad with bacon. Next I’ll drizzle some Spanish Xeres vinegar, Balsamic vinegar, cracked pepper and salt over fresh tomatoes from our garden, and call that cookin’ for papa!
