I can’t believe I’ve been extolling the wonders of Americana cuisine for two years now without ever once having paid homage to any of the amazing dishes in Creole or Cajun cooking! Shame on me :-/ So to hopefully make up for that oversight, on today’s show, I gave a description of the differences between the two cuisines with a teensy bit of history as to how and why they really are different as well as related. And… I share my version of a Classic Chicken and Sausage Gumbo, which I hope you enjoy!
